The Story

While every family has its own variation, the classic combination of tomatoes, peppers and eggs remains timeless.   1. Peel and dice the tomatoes into small cubes.

  2. Slice the green peppers thinly.

  3. Heat the olive oil and butter in a skillet over medium heat.

  4. Add the peppers and sauté for 4–5 minutes until softened.

  5. Stir in the tomatoes and cook until they break down into a rich sauce.

  6. Season with salt, black pepper and red pepper flakes if desired.

  7. Crack the eggs directly into the pan or lightly beat them beforehand.

  8. Gently stir until the eggs are just set and remain soft and creamy.

  9. Remove the skillet from the heat immediately.
