A quick and satisfying Turkish breakfast toast filled with spicy sucuk sausage, fresh tomato and white cheese.
Lightly fry sucuk slices in a non-stick pan for 1–2 minutes per side.
Butter the outer sides of each bread slice.
Spread cheese on the inner sides.
Layer tomato slices then sucuk on one slice.
Close with the second slice.
Toast in a sandwich press or pan until golden on both sides.
Serve immediately.
Hazel's Note
Lightly warm the sucuk rather than frying hard — overcooked sucuk tastes bitter. Pat wet tomato slices dry to prevent a soggy toast.
