Homemade Croissant
Buttery layer upon layer, crisp outside and pillowy soft inside — a homemade croissant worth every minute of the process.
All Year · June 27, 2026
Turkey's iconic sesame-crusted bread ring — crispy outside, soft inside, and best enjoyed fresh from the oven.
The Story
Simit is inseparable from Istanbul mornings. Tea in one hand, simit in the other — baking it at home gives this simple ring a whole new meaning.
The smell of freshly baked simit is the best alarm clock.
Mix yeast, sugar and warm water; let rest 5 minutes until foamy.
Combine with flour, salt and oil; knead into a soft dough.
Cover and let rise 1 hour.
Divide into 8 pieces. Roll each into a long rope and join ends to form a ring.
Dip into the molasses mixture; let excess drip off.
Press all sides into sesame seeds to coat.
Place on a lined tray and rest 15 minutes.
Bake in a preheated 210°C oven for 20–25 minutes until golden.
Hazel's Note
The molasses wash gives simit its color and helps sesame adhere. A slightly soft dough keeps the inside fluffy.
